For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 cup Brie cheese, cut into small pieces
  • 1 large apple, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)
  • ½ cup breadcrumbs
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Glaze:

  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar

Instructions

Prepare the Chicken

  • Preheat the oven to 375°F (190°C). Grease a baking dish with cooking spray.
  • Using a sharp knife, carefully create a pocket in each chicken breast by slicing horizontally, being cautious not to cut all the way through.

Make the Stuffing

  • In a bowl, combine the diced apples, Brie cheese, breadcrumbs, thyme, olive oil, salt, and pepper. Mix until well combined.

Stuff the Chicken

  • Stuff each chicken breast pocket with the apple and Brie mixture, ensuring it is filled generously.
  • Secure the openings with toothpicks if necessary to prevent the stuffing from spilling out during cooking.

Prepare the Glaze

  • In a small bowl, whisk together the honey, Dijon mustard, and apple cider vinegar until smooth.

Bake the Chicken

  • Place the stuffed chicken breasts in the prepared baking dish and brush the tops with the honey glaze.
  • Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Serve the Dish

  • Once cooked, let the chicken rest for a few minutes before slicing. Remove toothpicks if used, and serve warm.
