  • 1 ripe mango, diced
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Fresh cilantro, for garnish (optional)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C).

Step 2: Prepare the Marinade

  • In a bowl, whisk together the coconut milk, lime juice, garlic powder, onion powder, salt, pepper, and paprika.

Step 3: Marinate the Chicken

  • Place the chicken breasts in a baking dish and pour the marinade over the top. Ensure the chicken is well-coated, then cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
