For the Eggy Crumpets:

  • 2 crumpets
  • 2 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter (for frying)
  • Salt and black pepper, to taste (optional)

Instructions

Step 1: Prepare the Egg Mixture

  • In a shallow dish, whisk together the eggs, milk, and a pinch of salt and pepper (if using). Make sure the mixture is well-combined.

Step 2: Soak the Crumpets

  • Place the crumpets in the egg mixture, allowing them to soak for about 30 seconds on each side. You want the crumpets to absorb some of the egg without becoming too soggy.

Step 3: Fry the Crumpets

  • Heat the butter in a non-stick frying pan over medium heat. Once the butter is melted and bubbling, add the soaked crumpets. Fry for 2-3 minutes on each side, or until golden brown and crispy.

Step 4: Serve

  • Once cooked, remove the crumpets from the pan and serve immediately with your choice of toppings.
