Here’s what you’ll need to make Broccoli Cauliflower Soup:

  • 4 cups broccoli florets (about 1 medium bunch)
  • 4 cups cauliflower florets (about ½ medium head)
  • 4 cups vegetable broth or chicken broth
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

Sauté the Aromatics:

  1. Heat the Olive Oil: In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Sauté the Onion and Garlic: Add the chopped onion and cook for about 5 minutes, until softened and translucent. Add the minced garlic and sauté for another 1-2 minutes until fragrant.

Cook the Vegetables:

  1. Add the Vegetables: Stir in the broccoli and cauliflower florets, allowing them to sauté for a couple of minutes with the onions and garlic.
