Preheat your oven to 400°F (200°C). Slice the baguette into ½-inch thick slices.
Toast the Bread
Arrange the slices on a baking sheet. Brush both sides lightly with olive oil. Bake for 5-7 minutes, or until golden and crispy.
Make the Tomato Mixture
In a bowl, combine halved cherry tomatoes, red onion (if using), minced garlic, chopped basil, lemon juice, salt, and pepper. Toss to combine and let sit for 5 minutes.
Assemble the Bruschetta
Remove the toasted bread from the oven. Place a generous spoonful of the tomato mixture on each slice.
Top with Burrata
Tear the burrata cheese into pieces and place them on top of the tomato mixture on each bruschetta.
Drizzle and Garnish
Drizzle with extra-virgin olive oil and balsamic glaze if desired. Garnish with fresh basil leaves.
