For the Garlic Bread:

  • 1 large baguette or Italian bread
  • 1/2 cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

For the Caprese Topping:

  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella, sliced or mozzarella balls
  • 1/4 cup fresh basil leaves, torn
  • 1 tablespoon balsamic glaze (optional)
  • Salt and pepper to taste

Instructions

Prepare the Garlic Bread

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Mix Garlic Butter: In a small bowl, combine the softened butter, minced garlic, salt, black pepper, and crushed red pepper flakes (if using) until well mixed.
  3. Slice the Bread: Cut the baguette in half lengthwise and place it on a baking sheet, cut side up.
  4. Spread the Mixture: Evenly spread the garlic butter mixture over the cut sides of the bread.

Toast the Bread

  1. Bake the Bread: Place the prepared bread in the preheated oven and bake for 10-12 minutes, or until the edges are golden and crispy.

Add the Caprese Topping

  1. Prepare the Toppings: While the bread is baking, combine the halved cherry tomatoes, fresh mozzarella, torn basil leaves, and a drizzle of balsamic glaze (if using) in a bowl. Season with salt and pepper to taste.
  2. Top the Bread: Once the bread is toasted, remove it from the oven and top it with the tomato and mozzarella mixture, spreading it evenly over the garlic bread.

Finish Baking

  1. Return to the Oven: Place the topped bread back in the oven for an additional 3-5 minutes, just until the cheese is slightly melted.
  2. Serve: Remove from the oven, slice, and serve warm.
