  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter

For Assembling the Parfaits:

  • 4 ripe bananas, sliced
  • 1 package vanilla wafers (about 3040 cookies)
  • Whipped cream, for topping
  • Additional caramel sauce (for drizzling)
  • Fresh mint leaves (optional, for garnish)

Instructions

Make the Caramel Sauce

  1. Combine Ingredients: In a saucepan, combine the brown sugar, butter, and heavy cream. Cook over medium heat, stirring occasionally.
  2. Simmer the Sauce: Once the butter has melted and the sugar is dissolved, bring the mixture to a gentle boil. Let it simmer for 5-7 minutes, stirring constantly, until it thickens.
  3. Add Vanilla and Salt: Remove from heat and stir in the vanilla extract and a pinch of salt. Let the sauce cool slightly.

Prepare the Banana Pudding

  1. Whisk the Pudding Mixture: In a medium saucepan, whisk together the milk, granulated sugar, eggs, cornstarch, and salt.
  2. Cook the Pudding: Cook over medium heat, whisking constantly until the mixture thickens and just begins to boil, about 7-10 minutes.
  3. Finish the Pudding: Remove from heat and stir in the butter and vanilla extract. Set aside to cool for a few minutes.

Assemble the Parfaits

  1. Layer the Parfaits: In small jars or serving glasses, begin by placing a spoonful of caramel sauce at the bottom.
  2. Add Pudding: Spoon a layer of the banana pudding over the caramel sauce.
  3. Add Bananas and Cookies: Layer fresh banana slices and vanilla wafers on top of the pudding. Repeat the layers as desired.
  4. Top with Whipped Cream: Finish with a dollop of whipped cream and drizzle additional caramel sauce over the top.
  5. Chill: Refrigerate the parfaits for at least 2 hours to allow the flavors to meld.
