Caramelized Honey Garlic Carrots Recipe

- 1 pound carrots, peeled and cut into sticks (or baby carrots for convenience)
- 2 tablespoons olive oil
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 tablespoon butter
- 1 tablespoon fresh parsley, chopped (for garnish)
- Salt and freshly ground black pepper to taste
- Optional: a pinch of red pepper flakes for a little heat
- Prepare the Carrots: If you’re using whole carrots, peel them and cut them into sticks about 2-3 inches long. If using baby carrots, simply rinse and pat them dry.
- Cook the Carrots: In a large skillet, heat the olive oil over medium heat. Add the carrots and cook, stirring occasionally, for about 8-10 minutes or until they start to soften and develop a light golden color.
- Add the Garlic: Stir in the minced garlic and cook for 1-2 minutes, just until fragrant. Be careful not to burn the garlic.
- Make the Glaze: Add the honey and butter to the skillet, stirring well to coat the carrots evenly. Reduce the heat to low and let the carrots cook for another 5-7 minutes, allowing the honey to caramelize and thicken. Stir frequently to prevent the glaze from burning.
- Season and Serve: Once the carrots are tender and beautifully caramelized, season them with salt, pepper, and red pepper flakes (if using). Remove from heat and sprinkle with fresh parsley for a burst of color and freshness. Serve immediately!
