Ingredients

Scale

Here’s what you’ll need to make Caramelized Onion Pasta:

  • 2 large yellow onions, thinly sliced
  • 3 tablespoons olive oil or unsalted butter
  • 2 cloves garlic, minced
  • 1 teaspoon sugar (optional, for faster caramelization)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 12 oz spaghetti or linguine
  • ½ cup pasta water (reserved)
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional, for added depth)
  • Fresh parsley, chopped, for garnish

Instructions

Caramelize the Onions:

  1. Heat the Oil or Butter: In a large skillet, heat the olive oil or butter over medium heat.
  2. Add Onions: Add the sliced onions and stir to coat them in the oil or butter.
  3. Cook Slowly: Reduce the heat to low and cook the onions for 30-40 minutes, stirring occasionally. Add a pinch of salt and the sugar (if using) to help the onions caramelize.
  4. Add Garlic: During the last 5 minutes of cooking, add the minced garlic and cook until fragrant.

Cook the Pasta:

  1. Boil the Pasta: While the onions cook, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining.

Combine and Finish the Dish:

  1. Mix Pasta and Onions: Add the cooked pasta to the skillet with the caramelized onions. Toss to combine.
  2. Add Pasta Water: Pour in the reserved pasta water a little at a time, stirring to create a silky sauce.
  3. Season: Stir in the Parmesan cheese and balsamic vinegar (if using). Adjust salt and pepper to taste.

Serve and Garnish:

  1. Plate the Pasta: Divide the pasta among serving plates.
  2. Garnish: Sprinkle with freshly chopped parsley and extra Parmesan cheese before serving.
