For the Filling:

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

For the Rolls-Up:

  • 4 large flour tortillas
  • 1/2 cup salsa or taco sauce
  • 1/2 cup sour cream (for serving, optional)
  • Chopped fresh cilantro (for garnish, optional)

Instructions

Prepare the Beef Filling

  1. Cook the Beef: In a large skillet over medium heat, brown the ground beef with the chopped onion until the meat is cooked through and the onion is softened, about 5-7 minutes.
  2. Add Garlic and Spices: Stir in minced garlic, chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2 minutes until fragrant.
  3. Mix in Cheese: Remove from heat and stir in shredded cheddar cheese until melted and well combined.

Assemble the Rolls-Up

  1. Warm the Tortillas: Warm the flour tortillas in a dry skillet or microwave until pliable.
  2. Spread Sauce: Spread a couple of tablespoons of salsa or taco sauce over each tortilla.
  3. Add Filling: Spoon a generous amount of the beef and cheese filling down the center of each tortilla.
  4. Roll It Up: Tightly roll each tortilla up, folding in the sides as you go to enclose the filling.

Bake the Rolls-Up

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Place in Baking Dish: Arrange the rolled tortillas seam-side down in a greased baking dish.
  3. Top with Sauce: Pour remaining salsa or taco sauce over the top of the rolls.
  4. Bake: Bake in the preheated oven for 15-20 minutes, or until heated through and slightly crispy.
