For the Main Dish:

  • 1 pound ground beef
  • 4 medium-sized potatoes, diced (about 4 cups)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Sauté the Beef

  • In a large pot or Dutch oven, heat olive oil over medium heat.
  • Add chopped onions and minced garlic, sautéing until onions are translucent.
  • Add the ground beef, breaking it apart with a spoon, and cook until browned. Drain excess fat if necessary.

Add Potatoes and Broth

  • Stir in the diced potatoes, beef broth, paprika, salt, and pepper.
  • Bring to a boil, then reduce heat to low and cover the pot.
  • Simmer for about 15-20 minutes, or until the potatoes are tender.

Incorporate Vegetables

  • Once the potatoes are tender, add the frozen mixed vegetables to the pot.
  • Stir well to combine and let cook for an additional 5 minutes until vegetables are heated through.

Melt the Cheese

  • Remove the pot from heat and sprinkle shredded cheddar cheese over the top.
  • Cover the pot for a few minutes to allow the cheese to melt.

Serve

  • Once the cheese is melted and bubbly, gently stir to combine.
  • Garnish with fresh parsley before serving.
  • Enjoy hot!
