Cheesy Sweet Potato Gratin

  • 2 lbs sweet potatoes, peeled and thinly sliced
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Gruyere cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for a kick)
  • 1/2 cup grated Parmesan cheese (for topping)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Sauté Onions and Garlic:
    • In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 4-5 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant. Remove from heat.
  • Prepare the Cream Mixture:
    • In a large bowl, combine the heavy cream, shredded cheddar cheese, Gruyere cheese, dried thyme, salt, black pepper, and cayenne pepper (if using). Mix well.
  • Layer the Sweet Potatoes:
    • Arrange half of the sweet potato slices in an even layer at the bottom of the greased baking dish. Pour half of the cream mixture over the sweet potatoes, followed by half of the sautéed onion and garlic mixture.
  • Repeat Layers:
    • Add the remaining sweet potato slices in another layer, followed by the remaining cream mixture and onion-garlic mixture. Press down gently to ensure everything is well combined.
  • Add Topping:
    • Sprinkle the grated Parmesan cheese evenly over the top.
  • Bake:
    • Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the sweet potatoes are tender and the top is golden and bubbly.
  • Cool and Serve:
    • Allow the gratin to cool for about 5 minutes before serving. Enjoy!
