For the Meatloaf:

  • 1 ½ pounds ground chicken
  • 1 cup finely chopped cooked ham
  • 1 cup shredded Swiss cheese (or Gruyère)
  • 1/2 cup almond flour (or breadcrumbs)
  • 1/4 cup chopped fresh parsley
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Glaze:

  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Combine Meatloaf Ingredients

  • In a large mixing bowl, combine ground chicken, chopped ham, shredded cheese, almond flour, parsley, eggs, minced garlic, Dijon mustard, salt, and black pepper. Mix until well combined, but do not overmix.

Shape the Meatloaf

  • Transfer the mixture to the prepared baking sheet or loaf pan and shape it into a loaf.

Prepare the Glaze

  • In a small bowl, mix together ketchup, brown sugar, and Worcestershire sauce until smooth. Brush half of the glaze over the meatloaf.

Bake the Meatloaf

  • Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).

Apply Remaining Glaze

  • About 10 minutes before the meatloaf is done, brush the remaining glaze over the top for extra flavor.

Rest and Slice

  • Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps retain moisture and makes for cleaner slices.
