For the Pasta:

  • 8 ounces penne pasta (or pasta of your choice)
  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced (Italian or your favorite flavor)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (red, green, or yellow)
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil, for garnish (optional)

Instructions

Cook the Pasta

  1. Boil the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté the Ingredients

  1. Heat the Oil: In the same pot, heat olive oil over medium heat.
  2. Cook the Sausage: Add the sliced chicken sausage to the pot and cook until browned, about 5-7 minutes.
  3. Add Onions and Garlic: Stir in the diced onion and minced garlic. Sauté for another 2-3 minutes until the onion is translucent.
  4. Add Vegetables: Toss in the chopped bell pepper and halved cherry tomatoes. Cook for 3-4 minutes until the vegetables soften.

Combine and Serve

  1. Mix in Spinach: Add the fresh spinach, cooked pasta, and Italian seasoning. Stir until the spinach wilts and everything is well combined.
  2. Season to Taste: Add salt and pepper as needed. If desired, mix in grated Parmesan cheese.
  3. Serve: Plate the pasta and garnish with fresh basil and additional Parmesan cheese if desired.
