  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese (cheddar or pepper jack works well)
  • 1/4 cup green onions, chopped
  • 2 tbsp olive oil, for drizzling

Instructions

Prepare the Sweet Potatoes

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Roast Sweet Potatoes: Place the cubed sweet potatoes on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Roast for about 20 minutes or until tender and slightly caramelized.

Make the Filling

  1. Combine Ingredients: In a large mixing bowl, combine the roasted sweet potatoes, ground chicken, chipotle seasoning, garlic powder, onion powder, smoked paprika, shredded cheese, and chopped green onions.
  2. Mix Well: Use your hands or a spoon to mix the ingredients until well combined.

Form the Poppers

  1. Shape the Mixture: Take small portions of the mixture and form them into bite-sized balls or patties.
  2. Place on Baking Sheet: Arrange the poppers on a greased baking sheet, ensuring they are spaced apart.

Bake the Poppers

  1. Bake: Bake in the preheated oven for 15-20 minutes or until the poppers are golden brown and cooked through.
