Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • Make the Chocolate Cake:
    • In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
    • Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
    • Carefully stir in the boiling water until the batter is smooth. The batter will be thin.
    • Divide the batter evenly between the prepared cake pans.
  • Bake the Cakes:
    • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  • Prepare the Blackberry Filling:
    • In a saucepan over medium heat, combine the blackberries, sugar, lemon juice, cornstarch, and water. Cook, stirring gently, until the mixture is bubbling and thickened (about 5-7 minutes). Remove from heat and let it cool.
  • Make the Chocolate Frosting:
    • In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing until combined.
    • Add the heavy cream and vanilla extract. Beat on high speed for about 2 minutes until fluffy.
  • Assemble the Cake:
    • Place one layer of the cooled chocolate cake on a serving platter. Spread a layer of the blackberry filling on top.
    • Place the second cake layer on top and frost the entire cake with chocolate frosting.
  • Decorate the Cake:
    • Use black decorating gel to create spooky designs or patterns on the cake. Top with fresh blackberries and sprinkle with edible glitter for an extra gothic touch.
  • Serve:
    • Slice and serve your Chocolate Blackberry Gothic Halloween Cake at your Halloween gathering!
