  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

Prepare the Dough

  1. Mix Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.
  2. Combine Sugars and Oil: In a large bowl, mix granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in vanilla extract until smooth.
  4. Combine Wet and Dry: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. The dough will be thick and sticky.
  5. Chill the Dough: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up the dough.

Shape and Bake the Cookies

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Roll into Balls: Using a tablespoon or cookie scoop, portion out the chilled dough and roll into balls.
  3. Coat in Powdered Sugar: Roll each ball in powdered sugar until well coated.
  4. Place on Baking Sheet: Arrange the coated balls on the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake: Bake in the preheated oven for 10-12 minutes. The cookies should look slightly cracked on top but still soft in the center.
  6. Cool: Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
