For the Cookie Dough:

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate chips

For the Chocolate Dip:

  • 1 1/2 cups semi-sweet chocolate chips (for dipping)
  • 1 tablespoon coconut oil or shortening (optional, for a smoother dip)

Instructions

Prepare the Cookie Dough

  1. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  2. Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs, one at a time, along with the vanilla extract until well combined.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the semi-sweet chocolate chips.

Chill the Dough

  1. Chill: Cover the dough with plastic wrap and refrigerate for at least 30 minutes to firm up.

Shape and Bake

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Shape Cookies: Once chilled, scoop tablespoons of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  3. Bake: Bake for 10-12 minutes or until the edges are lightly golden and the centers are set. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Dip the Cookies

  1. Melt Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  2. Dip Cookies: Once the cookies are completely cooled, dip half of each cookie into the melted chocolate, allowing any excess to drip off.
  3. Set: Place the dipped cookies on a parchment-lined baking sheet and let the chocolate set. You can speed up the process by placing them in the refrigerator for about 20 minutes.
