For the Marinade:

  • 1/4 cup olive oil
  • 3 tbsp honey or maple syrup
  • 2 tbsp Dijon mustard
  • 1 lemon, juiced and zested
  • 1 orange, juiced and zested
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped (or 1 tbsp dried)
  • 2 tbsp fresh thyme, chopped (or 1 tbsp dried)
  • Salt and black pepper to taste

For the Salmon:

  • 1 1/2 lbs salmon fillet, skin on
  • Fresh lemon slices and herbs for garnish

Instructions

Prepare the Marinade

  1. Combine Ingredients: In a mixing bowl, whisk together the olive oil, honey (or maple syrup), Dijon mustard, lemon juice and zest, orange juice and zest, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper until well blended.
  2. Set Aside: Reserve about 2 tablespoons of the marinade for basting later.

Marinate the Salmon

  1. Place Salmon in a Dish: Put the salmon fillet in a shallow dish or a large resealable plastic bag.
  2. Pour Marinade: Pour the marinade over the salmon, ensuring it is evenly coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.

Preheat the Oven

  1. Preheat Oven: Preheat your oven to 400°F (200°C).

Bake the Salmon

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Transfer Salmon: Place the marinated salmon fillet skin-side down on the prepared baking sheet.
  3. Baste the Salmon: Brush the reserved marinade over the top of the salmon fillet.
  4. Bake: Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork. Baste once more halfway through cooking for added flavor.

Serve

  1. Garnish: Remove from the oven and transfer to a serving platter. Garnish with fresh lemon slices and additional herbs, if desired.
  2. Enjoy: Serve warm, and savor your festive Christmas Salmon!
