For the Cornish Hen:

  • 2 Cornish hens (about 1 to 1.5 pounds each)
  • 1 cup apple cider
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 425°F (220°C).

Step 2: Prepare the Glaze

  • In a bowl, whisk together apple cider, maple syrup, Dijon mustard, minced garlic, thyme, rosemary, salt, and pepper. Set aside.

Step 3: Prepare the Hens

  • Rinse the Cornish hens under cold water and pat them dry with paper towels. Rub olive oil all over the hens, seasoning them with salt and pepper inside and out.

Step 4: Roast the Hens

  • Place the hens breast side up in a roasting pan. Pour the cider maple glaze over the hens, ensuring they are well coated. Reserve some of the glaze for basting later.

Step 5: Bake

  • Roast the hens in the preheated oven for 50-60 minutes, basting with the glaze every 15 minutes. The hens are done when the internal temperature reaches 165°F (75°C) and the skin is golden brown.

Step 6: Rest and Serve

  • Once cooked, remove the hens from the oven and let them rest for 10 minutes before carving. Serve warm, drizzled with the remaining glaze.
