In a bowl, whisk together apple cider, maple syrup, Dijon mustard, minced garlic, thyme, rosemary, salt, and pepper. Set aside.
Step 3: Prepare the Hens
Rinse the Cornish hens under cold water and pat them dry with paper towels. Rub olive oil all over the hens, seasoning them with salt and pepper inside and out.
Step 4: Roast the Hens
Place the hens breast side up in a roasting pan. Pour the cider maple glaze over the hens, ensuring they are well coated. Reserve some of the glaze for basting later.
Step 5: Bake
Roast the hens in the preheated oven for 50-60 minutes, basting with the glaze every 15 minutes. The hens are done when the internal temperature reaches 165°F (75°C) and the skin is golden brown.
