  • 2 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional Garnishes:

  • Chopped pecans or walnuts
  • Dried cranberries
  • Fresh parsley

Instructions

Prepare the Sweet Potatoes

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Dice the Sweet Potatoes: Peel and dice the sweet potatoes into 1-inch cubes for even cooking.
  3. Season the Sweet Potatoes: In a large bowl, toss the sweet potatoes with olive oil, maple syrup, cinnamon, salt, and pepper. Mix well to coat evenly.

Roast the Sweet Potatoes

  1. Spread on Baking Sheet: Arrange the sweet potatoes in a single layer on the prepared baking sheet to ensure even roasting.
  2. Roast in the Oven: Place in the preheated oven and roast for 30-35 minutes, turning once halfway through, until the sweet potatoes are tender and caramelized.
