For the Crust:

  • 1 ½ cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/2 cup packed brown sugar

For the Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (as needed for consistency)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set aside.

Step 2: Prepare the Crust

  • In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
  • Press the mixture firmly into the bottom of the prepared springform pan to form an even layer.

Step 3: Bake the Crust

  • Bake the crust in the preheated oven for about 8-10 minutes until lightly golden.
  • Remove from the oven and let cool while preparing the filling.

Step 4: Make the Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add the granulated sugar and vanilla extract, mixing until well combined.
  • Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  • Stir in the sour cream, flour, and ground cinnamon until the mixture is smooth and creamy.

Step 5: Swirl in Brown Sugar Mixture

  • In a small bowl, combine the brown sugar and an additional tablespoon of cinnamon.
  • Pour half of the cheesecake filling into the crust, followed by half of the brown sugar mixture.
  • Using a knife or skewer, gently swirl the fillings together. Repeat with the remaining cheesecake filling and brown sugar mixture.

Step 6: Bake the Cheesecake

  • Bake the cheesecake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly.
  • Turn off the oven and crack the door open, allowing the cheesecake to cool gradually for about 1 hour.

Step 7: Chill the Cheesecake

  • Remove the cheesecake from the oven and let it cool to room temperature.
  • Refrigerate for at least 2 hours, or preferably overnight, to set completely.

Step 8: Prepare the Cream Cheese Frosting

  • In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
  • Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  • Add milk as needed to reach your desired consistency.

Step 9: Frost the Cheesecake

  • Once the cheesecake is fully chilled, remove it from the springform pan.
  • Spread the cream cheese frosting evenly over the top of the cheesecake.
