Classic Gingerbread Men Cookies

Ingredients

  • 3 cups all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup molasses
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

For Decorating:

  • Royal icing (store-bought or homemade)
  • Candies or sprinkles for decorating

Instructions

  • Prepare the Dough:
    • In a large bowl, beat the butter and brown sugar until light and fluffy.
    • Add the molasses, egg, and vanilla extract, and mix until well combined.
  • Mix the Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, nutmeg, and salt.
  • Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
    • Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour (or overnight) until firm.
  • Roll and Cut the Dough:
    • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
    • Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
    • Use a gingerbread man cookie cutter to cut out shapes, and place them on the prepared baking sheets.
  • Bake:
    • Bake in the preheated oven for 8-10 minutes, or until the edges are set and lightly browned. Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  • Decorate:
    • Once the cookies are completely cool, decorate with royal icing and your choice of candies or sprinkles.
