Classic Gingerbread Men Cookies

- 3 cups all-purpose flour
- 3/4 cup packed brown sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup molasses
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
For Decorating:
- Royal icing (store-bought or homemade)
- Candies or sprinkles for decorating
- Prepare the Dough:
- In a large bowl, beat the butter and brown sugar until light and fluffy.
- Add the molasses, egg, and vanilla extract, and mix until well combined.
- Mix the Dry Ingredients:
- In a separate bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, nutmeg, and salt.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour (or overnight) until firm.
- Roll and Cut the Dough:
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
- Use a gingerbread man cookie cutter to cut out shapes, and place them on the prepared baking sheets.
- Bake:
- Bake in the preheated oven for 8-10 minutes, or until the edges are set and lightly browned. Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
- Decorate:
- Once the cookies are completely cool, decorate with royal icing and your choice of candies or sprinkles.
