Classic Three Cheese Ravioli

For the Ravioli Filling:

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg yolk
  • 1/4 cup fresh basil, chopped (optional)
  • Salt and pepper to taste

For the Ravioli Dough (if making from scratch):

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil

For the Sauce:

  • 2 cups marinara sauce or your favorite tomato sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  • Prepare the Ravioli Dough (if making from scratch):
    • In a large bowl or food processor, combine the flour and salt. Create a well in the center and add the eggs and olive oil.
    • Mix until the dough comes together. Knead on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
  • Prepare the Ravioli Filling:
    • In a medium bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, and egg yolk. Add chopped basil if using. Season with salt and pepper to taste. Mix well.
  • Roll Out the Dough:
    • Divide the dough into two equal parts. Roll out one part on a floured surface into a thin rectangle (about 1/16 inch thick).
    • Place spoonfuls of the cheese filling along the dough, spacing them about 1 inch apart. Brush the edges around the filling with water.
  • Form the Ravioli:
    • Roll out the second part of the dough and place it over the filled dough. Press down around the filling to seal. Use a ravioli cutter or a knife to cut out individual ravioli.
    • Press the edges firmly to ensure they are sealed. Repeat with the remaining dough and filling.
  • Cook the Ravioli:
    • Bring a large pot of salted water to a boil. Add the ravioli in batches and cook for 3-4 minutes or until they float to the top. Remove with a slotted spoon and set aside.
  • Prepare the Sauce:
    • In a saucepan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant (about 1 minute).
    • Add the marinara sauce, oregano, basil, salt, and pepper. Simmer for 5-10 minutes to let the flavors meld.
  • Serve:
    • Toss the cooked ravioli gently in the sauce or serve the sauce on top. Garnish with fresh basil or parsley if desired. Enjoy with a sprinkle of extra Parmesan cheese.
