Comforting One Pot Lasagna Soup

Ingredients

  • 1 lb ground beef (or Italian sausage)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish (optional)

Instructions

  • Cook the Meat:
    • In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat. Add the diced onion and cook until softened, about 4-5 minutes. Stir in the minced garlic and cook for an additional 1 minute.
  • Add Tomatoes and Broth:
    • Pour in the crushed tomatoes and chicken or vegetable broth. Stir to combine.
  • Add Noodles and Seasoning:
    • Bring the mixture to a boil. Add the broken lasagna noodles, Italian seasoning, salt, and pepper. Reduce the heat to a simmer and cook for about 15-20 minutes, or until the noodles are tender.
  • Stir in the Cheeses:
    • Once the noodles are cooked, stir in the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese until melted and creamy.
  • Serve:
    • Ladle the soup into bowls and top with the remaining mozzarella and Parmesan cheeses. Garnish with fresh basil or parsley if desired. Enjoy hot!
