Comforting One Pot Lasagna Soup

- 1 lb ground beef (or Italian sausage)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 8 oz lasagna noodles, broken into pieces
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley, for garnish (optional)
- Cook the Meat:
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat. Add the diced onion and cook until softened, about 4-5 minutes. Stir in the minced garlic and cook for an additional 1 minute.
- Add Tomatoes and Broth:
- Pour in the crushed tomatoes and chicken or vegetable broth. Stir to combine.
- Add Noodles and Seasoning:
- Bring the mixture to a boil. Add the broken lasagna noodles, Italian seasoning, salt, and pepper. Reduce the heat to a simmer and cook for about 15-20 minutes, or until the noodles are tender.
- Stir in the Cheeses:
- Once the noodles are cooked, stir in the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese until melted and creamy.
- Serve:
- Ladle the soup into bowls and top with the remaining mozzarella and Parmesan cheeses. Garnish with fresh basil or parsley if desired. Enjoy hot!
