For the Roast Beef

  • 3 lb (1.36 kg) beef roast (such as sirloin or rib-eye)
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 3 garlic cloves, minced
  • 2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)

For the Cranberry Balsamic Glaze

  • 1 cup fresh cranberries
  • ½ cup balsamic vinegar
  • ½ cup brown sugar
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon olive oil
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon salt

Instructions

Prepare the Roast Beef

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and place a rack in the center.
  2. Season the Beef: Pat the beef roast dry with paper towels. Rub the roast with olive oil, then season generously with salt, pepper, minced garlic, rosemary, and thyme. Make sure to coat all sides of the beef evenly.
  3. Sear the Beef: Heat a large oven-safe skillet over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side. This step helps lock in the juices and adds flavor to the roast.
  4. Roast the Beef: Once seared, transfer the skillet with the beef to the preheated oven. Roast for about 1 hour 30 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare. Adjust the cooking time to achieve your desired level of doneness.
  5. Rest the Beef: Once the roast is done, remove it from the oven and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute, ensuring a tender roast.

Make the Cranberry Balsamic Glaze

  1. Combine Ingredients: In a small saucepan, combine the cranberries, balsamic vinegar, brown sugar, honey, lemon juice, Dijon mustard, olive oil, salt, and pepper.
  2. Cook the Glaze: Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 15-20 minutes, stirring occasionally. The cranberries will burst and the sauce will thicken. Once the glaze reaches your desired consistency, remove it from the heat.
  3. Blend (Optional): If you prefer a smoother glaze, you can blend the sauce with an immersion blender or transfer it to a regular blender. This step is optional, depending on your texture preference.

Serve the Roast Beef

  1. Slice the Beef: After the beef has rested, slice it into thin slices against the grain. Arrange the slices on a platter.
  2. Drizzle the Glaze: Pour the warm cranberry balsamic glaze over the sliced roast beef, making sure to coat each piece with the sauce.
  3. Serve and Enjoy: Serve the beef immediately, alongside your favorite sides.
