Gather the following ingredients to make your Cranberry Pistachio Fudge:

  • 2 cups white chocolate chips
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup dried cranberries (chopped if large)
  • 1/2 cup shelled pistachios (lightly salted, chopped if large)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

Prepare the Pan:

  1. Line a Baking Pan: Line a 9×9-inch square baking pan with parchment paper or lightly grease it to make it easier to remove the fudge once it’s set.

Melt the Fudge Base:

  1. Melt the White Chocolate: In a medium saucepan, combine the white chocolate chips and sweetened condensed milk over low heat. Stir constantly until the mixture is completely melted and smooth.
  2. Add Vanilla and Salt: Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt to enhance the flavors.

Add Cranberries and Pistachios:

  1. Mix in Cranberries and Pistachios: Fold in the dried cranberries and chopped pistachios. Make sure the mix-ins are evenly distributed throughout the fudge mixture.

Set the Fudge:

  1. Pour into Pan: Pour the fudge mixture into the prepared baking pan and spread it evenly with a spatula.
  2. Chill: Refrigerate the fudge for at least 2 hours, or until it is firm and fully set.
