Instructions

Prepare the Base:

  1. Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Cook the Sausage: Add the sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
  3. Sauté the Vegetables: In the same pot, add the onion, carrots, and celery. Cook for 5-7 minutes until softened. Stir in the garlic and cook for an additional 1-2 minutes.

Simmer the Soup:

  1. Add the Broth and Beans: Pour in the chicken broth and add the white beans. Stir in the smoked paprika, thyme, and bay leaf.
