  • 1 baguette, sliced into 24 rounds
  • 1/4 cup olive oil
  • 1 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1 cup cherry tomatoes, finely diced
  • 1/4 cup fresh basil, finely chopped
  • 1 tablespoon balsamic glaze, for drizzling
  • Salt and pepper, to taste

Instructions

Prepare the Baguette

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Brush with Olive Oil: Place the baguette slices on a baking sheet and brush each slice with olive oil on both sides.
  3. Toast the Baguette: Toast in the oven for 8-10 minutes, until golden brown and crispy. Remove from oven and let cool slightly.

Prepare the Cream Cheese Mixture

  1. Mix Cream Cheese & Mozzarella: In a small bowl, combine the cream cheese and mozzarella until smooth.

Assemble the Bruschetta Bites

  1. Spread Cheese Mixture: Spread a spoonful of the cream cheese mixture onto each toasted baguette slice.
  2. Add Tomato and Basil: Top with a spoonful of diced cherry tomatoes and a sprinkle of fresh basil.
  3. Season and Drizzle: Season each bite with salt and pepper to taste, then drizzle with balsamic glaze.

Serve and Enjoy

  1. Arrange on Platter: Arrange the bruschetta bites on a serving platter and serve immediately.
