For the Curry:

large onion, finely chopped

ground cumin

ground coriander

turmeric powder

chili powder (optional)

can (400g) diced tomatoes

can (400g) coconut milk

cans (400g each) butter beans, drained and rinsed
Salt and pepper, to taste
Fresh cilantro, for garnish

Instructions
Prepare the Aromatics
Heat the olive oil in a large saucepan over medium heat.
Add the chopped onion and sauté for 5-7 minutes until softened and translucent.
Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes.
Add the Spices
Stir in the ground cumin, ground coriander, turmeric, and chili powder (if using).
Cook the spices for about 1 minute until fragrant.
Add the Liquids
Pour in the diced tomatoes and coconut milk, stirring well to combine.
Bring the mixture to a simmer over medium heat.
Add the Butter Beans
Stir in the drained butter beans.
Reduce the heat to low and let the curry simmer for 15-20 minutes, stirring occasionally, until thickened.
Season and Garnish
Taste and season with salt and pepper as needed.
Garnish with fresh cilantro before serving.
Serve
Serve the curry hot, accompanied by rice or naan bread.
