Creamy Chicken and Tomato Pasta Recipe

For the Pasta:

  • 12 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Sauce:

  • 1 can (14 ounces) diced tomatoes, drained
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh basil, for garnish (optional)

Instructions

Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Chicken

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced chicken, garlic, Italian seasoning, salt, and black pepper.
  • Cook for about 6-8 minutes, or until the chicken is cooked through and no longer pink.

Add the Tomatoes

  • Stir in the drained diced tomatoes, cooking for an additional 2-3 minutes until heated through.

Prepare the Sauce

  • Reduce the heat to low and pour in the heavy cream, stirring to combine.
  • Gradually add the Parmesan cheese, mixing until melted and the sauce is creamy.

Combine with Pasta

  • Add the cooked penne pasta to the skillet, tossing to coat the pasta evenly with the creamy sauce.

Serve and Garnish

  • Serve the Creamy Chicken and Tomato Pasta hot, garnished with fresh basil if desired.
