  • 1 bell pepper (red or green), finely chopped
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For Serving:

  • 4 hamburger buns
  • Sliced pickles (optional)
  • Chopped fresh parsley (for garnish)

Instructions

Cook the Vegetables

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.

Brown the Chicken

  • Add the ground chicken to the skillet, breaking it up with a wooden spoon. Cook until the chicken is browned and cooked through, about 6-8 minutes.

Season the Mixture

  • Stir in the Cajun seasoning, Worcestershire sauce, and season with salt and pepper. Mix well to combine all the flavors.

Add the Broth

  • Pour in the chicken broth, bringing the mixture to a simmer. Reduce the heat and let it cook for about 5 minutes until the sauce thickens slightly.

Prepare the Buns

  • While the filling simmers, lightly toast the hamburger buns under a broiler or in a toaster until golden brown.

Assemble the Sloppy Joes

  • Spoon the Cajun chicken mixture generously onto the bottom half of each bun. Add sliced pickles if desired, and top with the other half of the bun.
