Delicious Garlic Parmesan Roasted Shrimp

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter, melted
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • Salt and pepper, to taste
  • Lemon wedges, for serving (optional)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Prepare the Garlic Butter Mixture:
    • In a small bowl, combine the melted butter, olive oil, minced garlic, chopped parsley, dried oregano, and red pepper flakes (if using). Mix well.
  • Coat the Shrimp:
    • Place the shrimp in a large bowl. Pour the garlic butter mixture over the shrimp and toss to coat evenly. Season with salt and pepper to taste.
  • Arrange on Baking Sheet:
    • Spread the coated shrimp out in a single layer on the prepared baking sheet. Sprinkle the grated Parmesan cheese evenly over the top of the shrimp.
  • Roast the Shrimp:
    • Roast in the preheated oven for 8-10 minutes, or until the shrimp are pink and opaque, and the Parmesan is melted and slightly golden.
  • Serve:
    • Remove from the oven and serve immediately with lemon wedges on the side, if desired.
