Delicious Homemade Chorizo Pizza

For the Pizza Dough:

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 1/2 cups warm water (110°F/45°C)
  • 3 1/2 to 4 cups all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt

For the Pizza Topping:

  • 1 tablespoon olive oil
  • 1/2 pound chorizo, casing removed and crumbled
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup pizza sauce (store-bought or homemade)
  • 1/2 red onion, thinly sliced
  • 1/2 bell pepper (any color), thinly sliced
  • 1/2 cup black olives, sliced (optional)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil

Instructions

  • Prepare the Pizza Dough:
    • In a small bowl, dissolve the yeast and sugar in warm water. Let sit for 5-10 minutes until foamy.
    • In a large bowl, combine 3 1/2 cups of flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
    • Mix until a dough forms. Turn out onto a floured surface and knead for 5-7 minutes, adding more flour if necessary, until the dough is smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.
  • Prepare the Chorizo:
    • While the dough is rising, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the crumbled chorizo and cook until browned and cooked through, breaking it apart with a spoon. Remove from heat and set aside.
  • Preheat the Oven:
    • Preheat your oven to 475°F (245°C) and place a pizza stone or an inverted baking sheet in the oven to heat.
  • Assemble the Pizza:
    • Punch down the risen dough and divide it in half (for two pizzas) or keep it whole for one large pizza. Roll out the dough on a floured surface to your desired thickness.
    • Transfer the rolled-out dough to a piece of parchment paper for easy handling.
    • Spread a thin layer of pizza sauce over the dough, leaving a small border around the edges.
    • Sprinkle the mozzarella and cheddar cheeses evenly over the sauce.
    • Top with cooked chorizo, sliced red onion, bell pepper, and black olives (if using).
    • Sprinkle dried oregano and basil over the top.
  • Bake the Pizza:
    • Carefully transfer the pizza (with parchment paper) onto the preheated pizza stone or baking sheet.
    • Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly and melted.
  • Serve:
    • Remove the pizza from the oven and let it cool for a few minutes before slicing. Enjoy warm!
