Instructions
Prepare the Panna Cotta:
Bloom the Gelatin: In a small bowl, sprinkle the gelatin powder over the water and let it sit for about 5 minutes to bloom.
Heat the Cream and Milk: In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat, stirring constantly until the sugar dissolves and the mixture is warm but not boiling.
Dissolve the Gelatin: Once the cream mixture is warm, remove from heat. Stir in the bloomed gelatin until fully dissolved.
Add Vanilla Extract: Stir in the vanilla extract and mix well.
Pour into Shot Glasses: Carefully pour the panna cotta mixture into small shot glasses or dessert cups. Let them cool at room temperature for 10 minutes, then transfer to the fridge. Chill for at least 2-3 hours, or until set.
Prepare the Dragon Fruit Layer:
Blend the Dragon Fruit: Place the peeled and chopped dragon fruit in a blender or food processor. Blend until smooth.
Sweeten (Optional): If the dragon fruit is not sweet enough, add the sugar and lemon juice, blending again until combined.
Layer the Dragon Fruit: Once the panna cotta is set, spoon the dragon fruit puree over the top of each panna cotta layer, filling the glass with about 1-2 tablespoons of the fruit mixture.
Garnish and Serve:
Garnish the Shooters: Top with fresh mint leaves, edible flowers, or additional fresh fruit slices for an extra burst of color and freshness.
Chill Again: Return the parfaits to the fridge for 15-20 minutes to let the dragon fruit layer set slightly.
