For the Baked Gnocchi:

  • 1 pound potato gnocchi (store-bought or homemade)
  • 2 cups cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded or cubed
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C) while you prepare the other ingredients.

Step 2: Prepare the Gnocchi

  • In a large baking dish, combine the potato gnocchi, halved cherry tomatoes, minced garlic, olive oil, oregano, salt, and pepper. Toss everything together until the gnocchi and tomatoes are well coated in oil and seasonings.

Step 3: Add Cheese

  • Scatter the shredded or cubed mozzarella cheese evenly over the top of the gnocchi and tomato mixture.

Step 4: Bake

  • Place the baking dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly and the tomatoes are roasted.

Step 5: Garnish and Serve

  • Remove the dish from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
