  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or milk with 1 teaspoon vinegar if you don’t have buttermilk)

Instructions

Step 1: Prepare the Dry Ingredients

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Step 2: Cream the Butter and Sugar

  • In a large mixing bowl, beat the softened butter and sugar together with a hand mixer or stand mixer on medium speed until light and fluffy, about 3-4 minutes.

Step 3: Add Eggs and Bananas

  • Beat in the eggs, one at a time, until fully incorporated. Add the mashed bananas and vanilla extract, mixing until smooth.

Step 4: Combine Dry Ingredients with Wet

  • Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.

Step 5: Bake the Cake

  • Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  • Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
