For the Chicken:

  • 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon paprika

For the Sauce:

  • 1 tablespoon butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Fresh cilantro, for garnish

Instructions

Step 1: Cook the Chicken

  • In a large skillet or saucepan, heat the vegetable oil over medium-high heat.
  • Season the chicken pieces with salt, pepper, cumin, garam masala, and paprika.
  • Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.

Step 2: Sauté Aromatics

  • In the same skillet, add the butter. Once melted, add the chopped onion and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.

Step 3: Add Tomatoes and Spices

  • Pour in the crushed tomatoes, ground coriander, turmeric, and red pepper flakes (if using). Stir to combine and bring to a simmer.
  • Let the mixture cook for about 5 minutes, allowing the flavors to meld.

Step 4: Stir in Cream

  • Reduce the heat to low and slowly stir in the heavy cream. Simmer for an additional 5 minutes, allowing the sauce to thicken slightly.

Step 5: Combine Chicken and Sauce

  • Return the cooked chicken to the skillet, stirring to coat the chicken in the sauce. Simmer for another 2-3 minutes until heated through.

Step 6: Serve

  • Garnish with fresh cilantro and serve your Easy Butter Chicken over steamed rice or with warm naan.
