Easy Cheesy BBQ Chicken Pizza Rolls

- 1 lb pizza dough (store-bought or homemade)
- 1 cup cooked chicken, shredded or diced
- 1/2 cup BBQ sauce (plus more for dipping)
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
Optional Toppings:
- Sliced jalapeños (for extra heat)
- Bacon bits (for added flavor)
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the Filling:
- In a medium bowl, mix the cooked chicken with BBQ sauce. Season with salt and pepper to taste.
- Add the shredded mozzarella and cheddar cheeses, chopped red onion, and cilantro (if using). Stir until everything is well combined.
- Roll Out the Dough:
- On a lightly floured surface, roll out the pizza dough into a large rectangle, about 12×9 inches (30×23 cm). Try to keep the thickness even.
- Add the Filling:
- Spread the BBQ chicken mixture evenly over the rolled-out dough, leaving a 1-inch (2.5 cm) border around the edges.
- Add any optional toppings like jalapeños or bacon bits.
- Roll and Slice:
- Starting from one of the longer sides, carefully roll the dough into a tight log, just like rolling up a cinnamon roll.
- Pinch the seam to seal it, then slice the roll into 1-inch (2.5 cm) thick pieces using a sharp knife.
- Bake:
- Place the rolls, cut side up, onto the prepared baking sheet. Leave a bit of space between each roll.
- Brush the tops lightly with olive oil.
- Bake in the preheated oven for 15-18 minutes, or until the rolls are golden brown and the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let the rolls cool for a couple of minutes. Serve warm with extra BBQ sauce on the side for dipping.
