1 cup buttermilk (or regular milk with 1 tablespoon vinegar added)
1 large egg
2 tablespoons melted butter
Food coloring (orange, black, or any spooky color you like)
For Toppings:
Whipped cream
Chocolate chips
Sprinkles (Halloween-themed)
Fresh fruit (such as bananas or strawberries)
Instructions
Step 1: Prepare the Batter
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, mix the buttermilk, egg, and melted butter until well combined.
Step 2: Combine Ingredients
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Step 3: Add Food Coloring
Divide the batter into separate bowls and add a few drops of food coloring to each bowl. Mix until you achieve your desired color.
Step 4: Heat the Griddle
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
Step 5: Cook the Pancakes
Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface.
Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown. Repeat with the remaining batter.
Step 6: Assemble and Serve
Stack the pancakes on a plate, and add your favorite toppings. Get creative with whipped cream, sprinkles, and chocolate chips to make them extra festive!
