For the Main Dish:

  • 1 pound cheese ravioli (fresh or frozen)
  • 2 cups fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil, chopped (for garnish)

Instructions

Cook the Ravioli

  • Bring a large pot of salted water to a boil.
  • Add the ravioli and cook according to package instructions until al dente.
  • Drain and set aside, reserving a bit of the pasta water.

Sauté the Aromatics

  • In the same pot, heat olive oil over medium heat.
  • Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Prepare the Cream Sauce

  • Pour in the heavy cream and bring it to a gentle simmer.
  • Stir in grated Parmesan cheese and mix until melted and creamy.
  • Add Italian seasoning, salt, and pepper to taste.

Combine with Vegetables

  • Stir in chopped sun-dried tomatoes and spinach, cooking until the spinach wilts.
  • If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

Toss the Ravioli

  • Gently add the cooked ravioli to the pot, carefully tossing to coat in the creamy sauce.
  • Heat through for an additional 1-2 minutes.

Serve

  • Plate the ravioli and garnish with fresh basil before serving.
  • Enjoy hot!
