For the Macaron Shells:

  • 1 cup powdered sugar
  • 1/2 cup almond flour
  • 2 large egg whites
  • 1/4 cup granulated sugar
  • Red gel food coloring (for a spooky look)
  • 1/2 teaspoon vanilla extract

  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Red food coloring (for the “bloody” effect)

For the Decoration:

  • Additional red food coloring (for dripping effect)
  • Corn syrup (to help the color stick)

Instructions

  • Prepare the Baking Sheets:
    • Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper.
  • Make the Macaron Shells:
    • In a bowl, sift together the powdered sugar and almond flour. Set aside.
    • In a separate bowl, beat the egg whites until frothy. Gradually add the granulated sugar and continue beating until stiff peaks form. Add the vanilla extract and red gel food coloring until you reach your desired shade.
    • Gently fold in the sifted powdered sugar and almond flour mixture until just combined. Be careful not to deflate the egg whites.
    • Transfer the batter to a piping bag fitted with a round tip. Pipe 1.5-inch circles onto the prepared baking sheets, leaving space between each one.
  • Let the Shells Rest:
    • Let the piped macarons sit at room temperature for 30-60 minutes until a skin forms on the surface. They should not stick to your finger when touched.
  • Bake the Macarons:
    • Bake in the preheated oven for 15-18 minutes. Let them cool completely on the baking sheets before removing.
  • Prepare the Filling:
    • In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, heavy cream, and vanilla extract. Mix until smooth. Add red food coloring to achieve a “bloody” appearance.
  • Assemble the Macarons:
    • Pair the macaron shells by size. Pipe a small amount of filling onto the flat side of one shell and sandwich it with another shell.
  • Create the Bloody Effect:
    • In a small bowl, mix a few drops of corn syrup with red food coloring to create a thick “blood” mixture. Use a toothpick or small brush to drip the mixture around the edges of the macarons, letting it drip down for a spooky effect.
  • Serve:
    • Place the finished Eerie Bloody Macarons on a serving platter. Enjoy the eerie delight of these spooky treats!
