For the Hash Brown Baskets:

  • 2 large potatoes, grated
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Egg Filling:

  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup diced bell peppers (optional)
  • 1/4 cup diced green onions (optional)
  • Salt and pepper to taste

Instructions

Step 1: Preheat Oven

  • Preheat your oven to 400°F (200°C) and lightly grease a muffin tin.

Step 2: Prepare Hash Browns

  • In a large bowl, combine the grated potatoes, Parmesan cheese, olive oil, salt, and pepper. Mix until well combined.

Step 3: Form Baskets

  • Divide the potato mixture evenly among the muffin cups, pressing it down firmly to form baskets. Make sure to press the mixture up the sides of each cup to create a nest shape.

Step 4: Bake

  • Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and crispy.

Step 5: Add Egg Filling

  • Remove the baskets from the oven and crack an egg into each basket. Sprinkle with shredded cheese, diced bell peppers, green onions, salt, and pepper.

Step 6: Bake Again

  • Return to the oven and bake for an additional 10-12 minutes, or until the eggs are set to your liking.

Step 7: Cool and Serve

  • Allow the baskets to cool for a few minutes before carefully removing them from the muffin tin. Serve warm.
