1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
1/4 cup diced bell peppers (optional)
1/4 cup diced green onions (optional)

Instructions
Step 1: Preheat Oven
Preheat your oven to 400°F (200°C) and lightly grease a muffin tin.
Step 2: Prepare Hash Browns
In a large bowl, combine the grated potatoes, Parmesan cheese, olive oil, salt, and pepper. Mix until well combined.
Step 3: Form Baskets
Divide the potato mixture evenly among the muffin cups, pressing it down firmly to form baskets. Make sure to press the mixture up the sides of each cup to create a nest shape.
Step 4: Bake
Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and crispy.
Step 5: Add Egg Filling
Remove the baskets from the oven and crack an egg into each basket. Sprinkle with shredded cheese, diced bell peppers, green onions, salt, and pepper.
Step 6: Bake Again
Return to the oven and bake for an additional 10-12 minutes, or until the eggs are set to your liking.
Step 7: Cool and Serve
Allow the baskets to cool for a few minutes before carefully removing them from the muffin tin. Serve warm.
