Wash and Dice: Thoroughly wash all fresh fruits. Dice the apples and pears into bite-sized pieces, slice the grapes in half, and prepare the pomegranate seeds.
Combine Fruits: In a large mixing bowl, combine the diced apples, pears, pomegranate seeds, sliced grapes, diced persimmons (if using), dried cranberries, and chopped nuts.
Make the Dressing
Mix Dressing Ingredients: In a small bowl, whisk together the lemon juice, honey or maple syrup, cinnamon, and vanilla extract until well combined.
Combine Salad and Dressing
Dress the Salad: Drizzle the dressing over the fruit mixture and gently toss to coat all the fruits evenly with the dressing.
Taste and Adjust: Taste the salad and adjust sweetness or acidity by adding more honey or lemon juice if desired.
