For the Salad:

  • 2 cups diced apples (such as Granny Smith or Honeycrisp)
  • 2 cups diced pears (such as Bosc or Bartlett)
  • 1 cup pomegranate seeds
  • 1 cup sliced grapes (red or green)
  • 1 cup diced persimmons or mango (optional)
  • 1/2 cup dried cranberries or raisins
  • 1/4 cup chopped walnuts or pecans (optional)

For the Dressing:

  • 2 tbsp fresh lemon juice
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp cinnamon (optional)
  • 1/2 tsp vanilla extract (optional)

Instructions

Prepare the Fruits

  1. Wash and Dice: Thoroughly wash all fresh fruits. Dice the apples and pears into bite-sized pieces, slice the grapes in half, and prepare the pomegranate seeds.
  2. Combine Fruits: In a large mixing bowl, combine the diced apples, pears, pomegranate seeds, sliced grapes, diced persimmons (if using), dried cranberries, and chopped nuts.

Make the Dressing

  1. Mix Dressing Ingredients: In a small bowl, whisk together the lemon juice, honey or maple syrup, cinnamon, and vanilla extract until well combined.

Combine Salad and Dressing

  1. Dress the Salad: Drizzle the dressing over the fruit mixture and gently toss to coat all the fruits evenly with the dressing.
  2. Taste and Adjust: Taste the salad and adjust sweetness or acidity by adding more honey or lemon juice if desired.
