Festive Christmas Tree Focaccia

For the Dough:

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 1/2 cups warm water (110°F/45°C)
  • 1 tablespoon sugar
  • 3 1/2 cups all-purpose flour
  • 1/4 cup olive oil (plus extra for brushing)
  • 1 1/2 teaspoons salt

For the Toppings:

  • 1/4 cup olive oil (for drizzling)
  • 1/4 cup grated Parmesan cheese
  • Fresh rosemary sprigs (for decorating)
  • Cherry tomatoes (halved)
  • Black olives (pitted)
  • Sliced bell peppers (red, green, or yellow)
  • Coarse sea salt (for sprinkling)

Instructions

  • Prepare the Dough:
    • In a small bowl, dissolve the sugar in warm water. Sprinkle the yeast on top and let it sit for 5-10 minutes, until frothy.
    • In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
    • Stir until a rough dough forms, then transfer to a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  • Shape the Focaccia:
    • Preheat your oven to 425°F (220°C).
    • Punch down the risen dough and transfer it to a lightly oiled baking sheet or parchment paper. Gently stretch and press the dough into a triangle shape, resembling a Christmas tree.
    • Use your fingers to create dimples all over the dough.
  • Add Toppings:
    • Drizzle the top of the dough with olive oil.
    • Sprinkle the grated Parmesan cheese over the dough.
    • Arrange the fresh rosemary sprigs to resemble the branches of a Christmas tree.
    • Decorate with halved cherry tomatoes, black olives, and sliced bell peppers to create ornaments and a tree trunk.
    • Sprinkle with coarse sea salt.
  • Bake the Focaccia:
    • Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown and crisp on the edges.
    • Remove from the oven and let cool slightly before transferring to a wire rack.
  • Serve:
    • Slice and serve warm or at room temperature. Enjoy as an appetizer, side dish, or festive snack!
