For the Cake:

  • 2 cups almond meal
  • 1 cup shredded unsweetened coconut
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil or unsalted butter

For Serving (Optional):

  • Fresh fruit (berries or sliced mango)
  • Whipped cream or coconut cream
  • Powdered sugar for dusting
  • Chocolate sauce or caramel drizzle

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.

Mix Dry Ingredients

  • In a large mixing bowl, combine the almond meal, shredded coconut, granulated sugar, baking powder, and salt. Stir until well mixed.

Combine Wet Ingredients

  • In another bowl, whisk together the eggs, vanilla extract, and melted coconut oil or butter until fully combined.

Combine Mixtures

  • Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be thick and slightly grainy.

Pour into the Pan

  • Transfer the batter to the prepared cake pan, smoothing the top with a spatula.

Bake the Cake

  • Bake for 25-30 minutes or until the cake is set and lightly golden. A toothpick inserted in the center should come out clean.

Cool the Cake

  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
