Fluffy Garlic Rosemary Focaccia Muffins

For the Dough:

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 tablespoon sugar
  • 1 1/2 cups warm water (110°F/45°C)
  • 3 1/2 cups all-purpose flour
  • 1/4 cup olive oil (plus extra for brushing)
  • 1 1/2 teaspoons salt

For the Topping:

  • 1/4 cup olive oil
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 teaspoon coarse sea salt
  • Freshly ground black pepper (optional)

Instructions

  • Prepare the Dough:
    • In a small bowl, dissolve the sugar in warm water. Sprinkle the yeast on top and let it sit for 5-10 minutes, until it becomes frothy.
    • In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
    • Stir until a rough dough forms, then transfer to a lightly floured surface and knead for about 8-10 minutes, until smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  • Preheat the Oven and Prepare Muffin Tins:
    • Preheat your oven to 400°F (200°C).
    • Grease a standard 12-cup muffin tin with olive oil or line with paper muffin liners.
  • Shape the Dough into Muffins:
    • Punch down the risen dough and divide it into 12 equal portions.
    • Roll each portion into a ball and place them in the prepared muffin cups.
    • Use your fingers to press down on the dough balls, creating small dimples on top.
  • Prepare the Topping:
    • In a small bowl, combine the olive oil, minced garlic, and chopped rosemary.
    • Brush the garlic-rosemary oil generously over the top of each dough ball.
    • Sprinkle each muffin with coarse sea salt and freshly ground black pepper, if desired.
  • Bake:
    • Bake in the preheated oven for 18-22 minutes, or until the focaccia muffins are golden brown and the tops are slightly crisp.
    • Remove from the oven and allow the muffins to cool slightly in the tin before transferring them to a wire rack to cool completely.
  • Serve:
    • Serve warm or at room temperature. These muffins are delicious on their own or served with a side of olive oil and balsamic vinegar for dipping.
