Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Prepare the Biscuits
In a mixing bowl, combine the flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add the milk, mixing until just combined.
Roll and Cut the Dough
On a lightly floured surface, roll out the dough to about 1-inch thickness. Cut out biscuits using a round cutter or a glass. Place them on the prepared baking sheet.
Add the Filling
In a separate bowl, mix the thinly sliced roast beef, shredded provolone cheese, Worcestershire sauce, salt, and pepper. Spoon a generous amount of the beef mixture onto the center of half the biscuits.
Top with Biscuits
Place the remaining biscuits on top of the filled biscuits, pressing the edges to seal them.
Bake
Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown.
Prepare the Au Jus
In a saucepan, combine the beef broth, soy sauce, garlic powder, and onion powder. Bring to a simmer over medium heat, then remove from heat.
Serve
Remove the biscuits from the oven and let them cool slightly. Serve warm with the au jus on the side for dipping, garnished with chopped parsley.
