For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup milk

For the Filling:

  • 1 pound thinly sliced roast beef
  • 1 cup provolone cheese, shredded
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste

For the Au Jus:

  • 2 cups beef broth
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare the Biscuits

  • In a mixing bowl, combine the flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add the milk, mixing until just combined.

Roll and Cut the Dough

  • On a lightly floured surface, roll out the dough to about 1-inch thickness. Cut out biscuits using a round cutter or a glass. Place them on the prepared baking sheet.

Add the Filling

  • In a separate bowl, mix the thinly sliced roast beef, shredded provolone cheese, Worcestershire sauce, salt, and pepper. Spoon a generous amount of the beef mixture onto the center of half the biscuits.

Top with Biscuits

  • Place the remaining biscuits on top of the filled biscuits, pressing the edges to seal them.

Bake

  • Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown.

Prepare the Au Jus

  • In a saucepan, combine the beef broth, soy sauce, garlic powder, and onion powder. Bring to a simmer over medium heat, then remove from heat.

Serve

  • Remove the biscuits from the oven and let them cool slightly. Serve warm with the au jus on the side for dipping, garnished with chopped parsley.
