Frightful Halloween Spider Cupcakes

For the Chocolate Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder (unsweetened)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 1/2 cup hot water

For the Chocolate Frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/2 cup cocoa powder
  • 23 tablespoons milk
  • 1 teaspoon vanilla extract

For the Spider Decorations:

  • Black licorice laces (for the legs)
  • Candy eyes
  • Mini chocolate sandwich cookies (or round chocolate candies for the body)
  • Black decorating gel or melted chocolate (optional)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and line a cupcake pan with 12 cupcake liners.
  • Make the Cupcake Batter:
    • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • In a separate bowl, whisk together the vegetable oil, eggs, vanilla extract, and milk. Slowly add the wet ingredients to the dry ingredients and mix until combined.
    • Stir in the hot water (the batter will be thin). Pour the batter evenly into the cupcake liners, filling each about 2/3 full.
  • Bake the Cupcakes:
    • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack before frosting.
  • Prepare the Chocolate Frosting:
    • In a large bowl, beat the softened butter with an electric mixer until creamy. Add the powdered sugar and cocoa powder gradually, mixing well after each addition.
    • Add the vanilla extract and 2 tablespoons of milk. Continue beating until the frosting is smooth and fluffy. Add more milk if needed to reach a spreadable consistency.
  • Frost the Cupcakes:
    • Once the cupcakes are completely cooled, frost each cupcake generously with the chocolate frosting using a spatula or piping bag.
  • Create the Spider Decorations:
    • Place a mini chocolate sandwich cookie or round chocolate candy in the center of each cupcake to form the spider’s body.
    • Attach two candy eyes on the cookie using a small dab of frosting.
    • Cut the black licorice laces into small pieces (about 2 inches long) and stick four legs on each side of the cookie, pressing them into the frosting slightly to secure them.
    • Optional: Use black decorating gel or melted chocolate to add a smile or fangs to your spider!
  • Serve:
    • Allow the frosting and decorations to set for a few minutes before serving. Your spooky spider cupcakes are ready to scare and delight!
