For the Crostini:

  • 1 French baguette, sliced into 12 pieces
  • 1 lb shrimp, peeled and deveined
  • 3 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Juice of 1 lime
  • 1 ripe avocado, mashed
  • Fresh cilantro or parsley, for garnish

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2: Prepare the Baguette

  • Arrange the sliced baguette on the prepared baking sheet. Brush each slice lightly with 1 tablespoon of olive oil. Bake in the preheated oven for 8-10 minutes, or until golden and crispy.

Step 3: Cook the Shrimp

  • While the bread is baking, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.

  • Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes, or until the shrimp are pink and opaque. Drizzle with lime juice and remove from heat.

Step 5: Prepare the Avocado

  • In a small bowl, mash the ripe avocado with a pinch of salt and a squeeze of lime juice to enhance its flavor.

  • Spread a generous amount of mashed avocado on each toasted baguette slice. Top with the garlic shrimp and garnish with fresh cilantro or parsley.
